Quirine Eijkman doceert en verricht onderzoek naar de relatie tussen mensenrechten en veiligheid, rechtssociologie en contraterrorisme. Daarnaast houdt ze zich bezig met het mediabeleid en de coördinatie van stages en onderzoek. Tevens werkt ze als zelfstandig consultant voor Justice Q&A en is zij voorzitter van het Nederlands Juristen Comité voor de Mensenrechten (NJCM).

In 2007 verdedigde ze haar proefschrift “We Are Here to Serve You!: Public Security, Police Reform and Human Rights Implementation in Costa Rica” dat ging over de implementatie van mensenrechten en politiehervormingen aan de Universiteit Utrecht. Zij heeft gewerkt voor Amnesty International, de Adviesraad Internationale Vraagstukken (AIV), de Roosevelt Academy van de Universiteit Utrecht, het Studie- en Informatiecentrum Mensenrechten van de Universiteit Utrecht en het Nederlandse Rode Kruis.
